Ingredients (for about 4 servings)
• 1 kg eggplants (about) sliced \u200b\u200b½ cm thick
• 2 cans of tuna in olive oil • 1 large can
(800 g) chopped fresh tomato
· Olive oil extra virgin, a couple of tablespoons (about 30 g for Thermomix)
• 1 teaspoon salt
• A little oregano
· A little Parmesan gratin (or cheese that you like)
Preparation
• Cook eggplant slices lightly steamed (to be completed in the oven.)
· Fry tomatoes in oil, oregano and salt, simmer for about 30 minutes or until reduced slightly.
· Preheat oven to 200 ยบ. In a tray suitable for the dish lay a layer of eggplant, a layer of tomato sauce (reserve a bit to cover everything), tuna and cover with another layer of eggplant. We cover everything with the remaining tomato sauce, sprinkle with cheese and bake for about 15 minutes grilling 5 minutes.
NOTES: Do not add sugar to tomato sauce because I like the flavor as is, but if you want you can add a teaspoon of sugar.
